My macarons are made with a French meringue technique which calls for a hot sugar syrup. It makes for a nice and crunchy crust while the inside stays chewy and moist.
All my fillings are buttercream or ganache based, with the addition of natural flavors or nut paste.

My buttercream of choice is a Swiss Meringue Buttercream. Very creamy, not as sweet as regular buttercream, with a silkier and more velvety mouthfeel. We only use real vanilla beans you can see and taste. We also make our very own marshmallow fondant; it has a rich, natural vanilla flavor and it's soft, smooth and delicious!
